Dan and I participated in the annual chili cook-off at our church this past Sunday. Here’s our entry:
General’s Chili
We named it after our pooch, General George Cotton of Gasparilla. An appropriate name, I think.
Our chili is a beef and sausage chili made with authentic Mexican ground chilis. I’d love to tell you which ones, but I can’t read the packages.
The only one I know for sure is ancho chili powder. It is the most flavorful chili I’ve ever made.

Did you win?! Could we handle it at a family gathering or would it burn our pale-face tongues off?
We didn’t win. Sad. Everyone we talked to liked our chili, and it was one of the first ones to be completely gone! I demand a re-count!
I think you could handle it. It had super flavor, but the spice didn’t last and accumulate on your tongue…unlike Korean food.
